Without any temperature control, limiting as much as possible the use of any technology and treading the grapes to immerse the skins in the wine’s own must. La Savia Divina re-creates wine as it had been elaborated generations ago.
Tasting Notes
Purplish middle layer with mineral and raspberry aromas right from the start. Smoky and earthy, evolving to a hint of violet and lavender, it is a wine that improves when exposed to air. Friendly when sipped, one perceives a prickly sensation which comes from the minimal manipulation during the elaboration of this handcrafted wine. Disappears with decanting.

The Monastrell grapes comes from ungrafted vineyards in San Agustin and San José, with sandy soil and very near to the sea, grown solely by peasant farmers. The Syrah grapes come from our own terraced, calcareous and stony vineyards in San Mateo.

This wine is neither filtered nor stored in barrels. It rests in reservoirs for several months in order to separate turbidities by natural decantation and is then immediately bottled. Due to its elaboration, natural sediments are inclined to appear. We recommend decanting.
