Vinification |
Harvested by hand in 12-kilo crates and refrigerated in a cold chamber at 2°C to 4°C until cold pressing using only the âfree-runâ juice. Debourbage during 24 hours and inoculated with starter cultures (indigenous yeasts). |
Ageing |
Fermented between 16-18 ÂșC in stainless steel. Aged on fine lees until final assembly and bottling. |
Identity |
With the different goblet-pruned Monastrell vineyards, of different ages and soil types, and from different regions of the island, we seek to create a balanced wine that transmits the DNA of this autochtonous ibicencan variety. |
Mainly clay and calcareous. Sandy in lesser proportions.
