| Harvested by hand in 12 kg crates and refrigerated in a cold chamber prior to direct pressing at low temperature. Debourbage of only the "free-run" juice during 24 hours and fermentation started with indigenous “pied de cuve.” |

| With the diversity of Monastrell across Ibiza – varying in age, soil and microclimate – we seek a balanced expression of this indigenous variety. The resulting fluid, fresh and floral style reflects Provençal elegance while remaining deeply rooted in Ibiza's identity and viticultural heritage. |
Iron-rich clay, calcareous and sandy in lesser proportions.
Fermented between 16-18 °C in stainless steel, with 10% in 700 l. French oak. Aged on fine lees until final blending and bottling.
