| Hand-harvested in 12-kg crates; each plot is harvested in several passes. The grapes are kept in cold storage until destemming and cold pressing. Settling takes place over 24 hours, followed by inoculation with indigenous yeast. |

Ferric clay and sandy limestone soils (San Mateo, Santa Ines and San Lorenzo)
Fermentation in stainless steel tanks with 10% skin contact (pelicular maceration). Wine remains on lees without stirring until end of December.
