| Hand-harvested in 12-kilo crates, pre-selected in the vineyards and stored in cold chamber at 2 °C for 24 hours until direct pressing. Racked for 24 hours and inoculated with indigenous yeasts (“pied de cuve”). |
| Identity |
| One of two single-parcel rosé wines. It is motivated by the calcareous limestone vein that runs through this small vineyard, as well as the special conditions provided by the subterranean stream (which traps humidity and lowers temperatures). These particular conditions enable us to produce our finest rosé: a wine that is fresh, creamy, elegant and structured, resulting from ageing in French oak. |

Aged on its lees in stainless steel deposits.
