Ibizkus Rosado 2011
Our vote for most beautiful rosé in the world! From the island of Ibiza. Organic vines on native rootstock. Sophisticated, richly textured, to go with Mediterranean food.

Tasting Notes: A savoury, elegant rosé, with complex aromas of red cherry, strawberry, fennel, black pepper, hibiscus, and licorice. The palate is silky smooth and refreshing, with both depth and lightness of touch, and a hint of tannin that makes it a great match with food. One of the finest rosés available.
Vintage Notes: Excellent. 2011 started with a very cold winter which the vines a good rest. A wet and warm spring followed, then it was dry until October, with a cool July but heatwaves in August and September. Thanks to the moderating influence, however, of the Mediterranean Sea, on these extremes, 2011 comes out somewhere between 2009 and 2010 in style, and is excellent.
Vineyards: Limestone-clay soils. 50m altitude. Dry, Mediterranean climate with cooling sea breezes and relative humidity. Phylloxera free. The vines are 40 years old. Grapes are hand picked very carefully in the cool of early morning only into small baskets in mid- September. 30 workers carefully hand pick and select the harvest into small baskets. 10 more workers at a rolling selection table discard individual berries that are not perfect.
Winemaking: Bunches sorted in vineyard and chilled to 5°C in a cooling container. De-stemmed and sorted again. Grape maceration will last 4-5 hours. Then berries are gently pressed for 2-3 hours in a pneumatic wine-press. Fermentation for 3 weeks. Temperature control below 15°C. No “saignée” (or bleeding) of the juice! Grapes are harvested to make a rosé wine!. The wine is matured 4 months in tank. The wine is bottled very lightly fined and filtered.
