Founded in 2007 as Totem Wines, Ibizkus has established itself as a leading winery on the island of Ibiza and its biggest wine exporter.
Over the past 16 years, Ibizkus has grown to exploit 28 hectares of vineyards on Ibiza — nearly half of the island's registered vines — and remains dedicated to the recuperation and preservation of the local Monastrell (or Mourvèdre) grape variety. This variety accounts for 90% of Ibizkus' production: both for its monovarietal reds as well as for its flagship Ibizkus rosé and Totem rosé wines.
Ibizkus also grows Malvasía, Syrah, Cabernet Sauvignon, Chardonnay, fine-grain Muscat and Macabeo. The ibizan Malvasía is the primary grape variety used in Totem, Ibizkus and Can Bassó white wines; characterized by a bouquet of honeysuckle, jasmine, and tropical fruit with flavours of ripe pear, citrus and peach, Malvasía whites are typically light and crisp with mild tannins and low acidity.
All Ibizkus wines are made from unirrigated, ecologically-grown grapes that are hand-harvested and fermented with natural yeasts. As a winery, we believe in less is more when it comes to sulfite use – we use only just enough to produce stable wines, avoid microbial growth and allow our wines to improve with time spent in bottle.

With both interior and exterior seating, smooth tunes and a menu of local and Spanish delicacies designed to accompany our rosé, white and red wines, the Ibizkus tasting room is a great place to relax with friends.
We wanted to create an atmosphere where our wines take the spotlight and our guests become the audience.
The interior is that of an "avant-guarde" winery with views through a glass pane to our cellar, complete with French-oak barrels, with two corner nook bench areas for larger groups, custom-designed bar tables and chairs as well as bar seating.
The exterior area also has a sofa and lounge area as well as seating for additional guests on both bar tables and regular tables. Situated behind the sofa area is a floor-to-ceiling wall of LED-lit barrels separating the dining area from access to the cellars.
Special attention has been placed on warm yet dim lighting to create a cozy ambience both inside and outside.
Designed by Luis Yanes of Yanes Interiors & Design, the Ibizkus tasting room is both in tune with Ibiza and unexpected from such a traditional business as a winery. Then again, with the exception of our passion for the conventional art of winemaking, Ibizkus has always been about setting new boundaries.

With direct access from the inside of our tasting room, the on-site Ibizkus store offers a complete selection of Ibizkus wines, most of the specialities available on our Pairing Menu, ibicencan herb liquors, salt and many other locally-produced products.

Ibiza has a long history in wine-making dating back 2.500 years to the Phoenicians, who introduced the original Monastrell grapes on the island around 500 B.C.
Fast-forward to the 21st century, Ibizkus started producing wines under the Totem Wines brand name. Laurent Frésard, while completing his Masters in Wine Management, discovered a passion for wines created from the diverse Mediterranean soil and unique grape varieties. He joined the Ibizkus team in 2008 with the aim of creating great wines from ungrafted vines grown locally on the island.
By 2010, then Totem Wines became the second largest winery in Ibiza, with a global production of 30,000 bottles. Under the watchful eye of oenologist David Lorenzo, 5 years later Ibizkus has doubled its production to 60,000 bottles and is now offering red, rosé and white wines.
Our philosophy stands firm: creating balanced and elegant wines, derived from unique locations, fusing rare and indigenous grapes with expert knowledge, specialist techniques and a passion for wine-making.
